Cooking recipes using honey mead

Introducing recipes for desserts and dishes using the Lithuanian national heritage mead and mead nectar. The fragrant honey liquor will enhance the dish even more.

[Walnut mead ice cream]


- Ingredients - 0.5 cup mead 8 egg yolks 1 cup powdered sugar (icing sugar) 500g crushed walnuts 600g whipped cream


- Cooking method -

  1. Mix egg yolks and powdered sugar while boiling.

  2. Add the mead "Stakrishkes" and crushed walnuts.

  3. Add whipped cream and mix.

  4. Transfer to a container and freeze to complete.


[Strawberry mead tart]


- Ingredients - Strawberries (small) 1 kg Whipped cream 200 g A few chopped pistachios - Ingredients for the biscuit dough - 3 eggs 125 g sugar 150 g flour 1 tsp baking powder Butter to taste For baking oil - Ingredients for the cream sauce - tbsp mead nectar 2 0.75 cup milk 1 tablespoon sugar 200g butter


- Cooking method -

  1. Make a base biscuit dough with eggs, sugar, flour and baking powder.

  2. Butter the dough and bake.

  3. Heat milk and sugar until caramelized.

  4. Add the mead nectar and butter and mix to make a cream sauce.

  5. When the base biscuit has cooled, spread the cream sauce.

  6. Garnish with strawberries on top.

  7. Complete with whipped cream and chopped pistachios.


[Pear mead compote]


- Ingredients - 5 pears 500cc water 1 cup gum syrup Cloves (spice) Coconut as desired Whipped cream as desired - Ingredients for caramel sauce - 2 tbsp mead 100g sugar 1 tbsp honey


- Cooking method -

  1. Cut the pear into rounds and bring to a boil with water and gum syrup.

  2. When boiling, add cloves (spice) and cool.

  3. Boil sugar, honey and mead (Stakrishkes) to make a sauce.

  4. After pulling a caramelized string, pour it over the pears on a plate.

  5. Complete with chopped and toasted coconut and whipped cream.

[ Thai mead grill ]

- Ingredients - 2 tablespoons of mead nectar 500g Thai 1 lemon (squeezed juice) 1 lemon juice A pinch of salt Sauce (see ingredients below) - Ingredients for the sauce - 1 red pepper 1 onion 3 cloves of garlic Dill 1 teaspoon of capers, 2 teaspoons of vinegar, 5 teaspoons of oil, 100cc of water, a pinch of salt and pepper


- Cooking method -

  1. Rub salt on the sea bream from which the scales have been removed.

  2. Soak well in lemon juice and mead nectar and wrap in foil for 5-6 hours.

  3. To make the sauce: Finely chop the red pepper, onion, garlic and dill.

  4. Add capers, vinegar, oil and water and season with salt and pepper.

  5. Grill the prepared sea bream in the oven (or charcoal).

  6. Finished with sauce.


[Mead Shashlik ]


- Ingredients - 2 tbsp mead nectar 4 pieces of chicken fillet 1 tbsp soy sauce 1 tbsp honey 1 tbsp mustard 1 tbsp lemon juice 1 tsp salt Grated ginger a little Sauce (see ingredients below) - Ingredients for the sauce - 1 red pepper Onion 1 garlic clove 3 cloves dill (optional) 1 teaspoon capers 2 teaspoons vinegar 5 teaspoons oil 100cc water Salt and pepper


- Cooking method -

  1. Mix mead nectar, soy sauce, honey, mustard, lemon juice, salt and grated ginger.

  2. Add the chicken cut into bite-sized pieces and let it sit for 5-6 hours.

  3. To make the sauce: Finely chop the red pepper, onion, garlic and dill.

  4. Combine the capers, vinegar, oil and water and season with salt and pepper.

  5. The prepared chicken is skewered and grilled over charcoal.

  6. Finished with sauce.


[Mead steak]


- Ingredients - Mead nectar to taste 500 g pork A little black pepper 1 teaspoon cinnamon 5 tablespoons soy sauce A little cloves 5 tablespoons lemon juice - Ingredients for the sauce - 5 tablespoons olive oil Ginger root to taste Honey to taste Lemon juice to taste Mustard to taste White wine to taste 1 teaspoon granulated sugar


- Cooking method -

  1. Cut pork and season with black pepper, cinnamon, soy sauce, cloves and lemon juice.

  2. Soak the meat in the mead nectar to cover it overnight.

  3. Wrap it in aluminum foil and bake it.

  4. Finished with a sauce that combines olive oil, ginger root, honey, lemon juice, mustard and white wine.



[Mead roast chicken stuffed with fruit rice ]


- Ingredients - Mead nectar 3 tbsp Salt enough for marinating chicken 1 chicken (1.2kg) 125g rice 1 apple 1 pear 1 banana 0.5 cup raisins 6 tbsp mayonnaise 2 tbsp lemon juice


- Cooking method -

  1. Rub the chicken with salt and soak in the mead nectar overnight.

  2. Rice is cooked and mixed with chopped fruits (apples, pears, bananas) and raisins.

  3. Add lemon juice and mayonnaise and stuff the chicken.

  4. Tie the legs with string.

  5. Spread the remaining mayonnaise over the surface.

  6. Grill in the oven for 1 hour and it's done.



[Mead Harling]


- Ingredients - 3 tbsp mead nectar 2 harlings (pickled herring) 1 small onion Oil to taste A pinch of cinnamon A pinch of salt 2 tbsp raisins 2 tbsp lemon juice A few toothpicks


- Cooking method -

  1. Sauté the chopped onions in oil and season with cinnamon and salt.

  2. Add raisins and fry further.

  3. Then add the mead nectar and lemon juice.

  4. Place the finished filling on top of the harling and wrap it up with a toothpick.

  5. Finish by decorating the plate with avocado, pickles, olives, etc. as you like .


[Oven grilled mead fillet]


- Ingredients - 2 tbsp mead nectar 500 g beef fillet Salt to taste Pepper to taste 2 onions To taste oil 3 tbsp sour cream 150 g cheese A little parsley


- Cooking method -

  1. Cut beef and season with salt and pepper.

  2. Add the mead nectar to the beef and the onion cut into rings and rub with your hands.

  3. Layer the beef and onions and leave in the refrigerator for 12 hours.

  4. Grease an oven plate with oil.

  5. Put beef and onions on it.

  6. Add sour cream, cheese and parsley.

  7. Bake in the oven.

  8. Completed with sautéed vegetables and potatoes.
